Dojima Roll Recipe

3 eggs
85g sugar
50g flour
2-3 drops of vanilla extract
235g cream

Step 1.Preheat oven to 355F.

Separate the yolks and to make meringue. Keep them for later use.

Step 2. Add 65g of sugar into the meringue as you are making it.

Step 3. Add the yolks into the meringue and gently mix with the hand mixer.

Step 4. Then add the flour, making a # shape as you mix them.

Step 5. Add 35 grams of lukewarm cream (may be microwaved if cold) and vanilla extract and mix them gently.

Step 6. Line a sheet of parchment paper and pour the mix. Bake in the oven for 15 minutes.

Let it cool as you whip up 200 grams of cream for filling with a hand mixer.

Step 7. Place the whipped cream on top of the baked bread, putting more cream towards the middle.

Step 8. Carefully roll the bread into a cylindrical shape and cool it in a refrigerator for at least an hour.

It is best to wrap the roll in parchment paper (and maybe a rubber band around it) while keeping in the refrigerator to let the roll settle down in its shape.

You can also sprinkle some sugar powder on top or add fruits like strawberries in the cream filling.
