Bacon Tomato Stew Recipe

Ingredients (2 servings):

1/2 cup of tomato sauce
1/4 cup of water
1 small spoon of crushed garlic
3 strips of bacon
2 slices of cheese
2 eggs
salt
pepper
parsley
1 mushroom (optional)
onion (optional)

Step 1. Cut bacon into small size and cook with crushed garlic. Add mushroom and onion if desired.

Step 2. Add tomato sauce and water and continue to cook in medium high heat.

Step 3. Once the stew looks ready, add 2 slices of cheese.

Step 4. As soon as the cheese starts melting, add 2 eggs and sprinkle salt, pepper, and parsley over it.

I like my eggs half cooked, but you can also wait until the eggs are completely done as well.

Enjoy with bread and/or rice (It went surprisingly well with it –almost like risotto!).
