Cheese Buldak (치즈불닭) Recipe

Cheese buldak is one of the famous side dish served with alcohol, but it can also be eaten as a meal. The name of the dish literally translates into “cheese fire chicken” in Korean –I hope there is no need to explain how spicy this dish is 🙂

However, I tweaked the sauce recipe a little so that it is not as spicy as the ones sold in Korea.
If you still find it spicy, just reduce the amount of gochujang (고추장; red chili sauce) and/or increase the amount of sugar.
If you would like to make it spicier, add more gochujang.


Ingredients (2 servings):

2-3 pieces of chicken breast or thigh
a preferable amont of onion
shredded cheese or sliced cheese

For sauce:

1 spoon of crushed garlic
1 spoon of red pepper powder
1 spoon of sesame oil
2 spoons of soy sauce
2 spoons of gochujang (고추장; red chili sauce)
2 spoons of sugar

Step 1. Add 1 spoon of crushed garlic, 1 spoon of red pepper powder, 1 spoon of sesame oil, 2 spoons of soy sauce, 2 spoons of gochujang (고추장; red chili sauce), and 2 spoons of sugar in a bowl and mix together.

Step 2. Cut chicken and onion into small pieces and cook with the sauce mix in medium high heat.


Step 3. Add shredded cheese or sliced cheese when the chicken is completely cooked.
Cook in low heat until the cheese is melted.

Enjoy with rice.

    Made this, and it’s absolutely fantastic. It’s going to be a permanent part of my kit. I cut the chili sauce down to 1 tsp. (and replaced the liquid with more soy sauce) and it was very good, mildly hot with a nice after-kick, perfect for a main course. This will definitely be seen again at my table.

    A tip: When i made this for my mother (who cannot eat spicy), I added some Yogurt into the pan and it managed to cut the heat pretty well. I also added some red/green peppers and it was great!
